There are a lot of different ways that you could make this Cross Vegetable Tray. If you don’t like, or won’t eat the vegetables I used to make mine, I will show you some variations you can use to switch it up. I used the yellow bell peppers because I thought it made it look like sunshine radiating behind the cross. I used the cucumber because it’s easy to shape and people love it. I used the cauliflower because not only is it a favorite in our house, but they look like clouds surrounding the cross.

ALTERNATIVES FOR THE YELLOW BELL PEPPER:

  • Celery
  • Green Bell Pepper
  • Red Bell Pepper
  • Carrots

ALTERNATIVES FOR THE CUCUMBER:

  • Broccoli
  • Pickles
  • Carrots
  • Celery

ALTERNATIVES FOR THE CAULIFLOWER:

  • Broccoli
  • Cherry Tomatoes
  • Mushrooms
  • Olives

HOW TO MAKE A CROSS VEGETABLE TRAY

Slice up two cucumber and arrange them in the shape of a cross on a 9×13 tray. Slice two yellow bell peppers into long slices, and arrange them on the top of the tray to look like rays of light shining from behind the cross. Then chop up one head of cauliflower into bite size florets and arrange to fill the space at the bottom of the tray. 

Cover the Cross Vegetable Tray and keep chilled until you’re ready to serve.
