Everyone knows that there are certain recipes that no one is ever going to be able to make like your Mama did. In our house there are several recipes I can call to mind that are like that. Fortunately, one of my favorites, Mama’s Meatloaf Recipe, isn’t one of them. This recipe is so easy to make, even a beginner can do it.

My husband swore when we got married, that he hated meatloaf, and didn’t want me to make it. Time passed, and I just had to make meatloaf for dinner one night. Suprise! He absolutely loved it, and it’s now one of his favorite meals!

I pair this with potatoes too (which I explain in the recipe) so it’s literally a one-pan meal. The potatoes go in with the meatloaf and cook for the same amount of time. They come out juicy and full of flavor and so soft. So by the time your oven timer dings, you will have your entree and side dish done. Even the most southern of meat-and-potatoes man would love this recipe!

Mama’s Meatloaf Recipe

Ingredients

  • 1.5 lbs of ground beef (we use 80/20)
  • 1 packet of dry onion soup mix
  • 2/3 cup of bread crumbs (or two slices of bread, crumbled)
  • 2 eggs
  • Ketchup
  • Salt and pepper
  • 1 lb potatoes (optional)

Instructions

  1. Preheat the oven to 400 degrees.
  2. Put the hamburger in a large bowl.

  4. Add the breadcrumbs (If you don’t have breadcrumbs, you can just put a couple of slices of bread into the food processor. That’s what I always do. This is a great way to use up stale bread, or the last couple of slices of bread as well.), the soup mix, and the eggs.

  6. Using your hands (yes, it’s cold and gross…just do it! It’s worth it!) mix the ingredients together until well combined.
  7. In an ungreased 9×13 baking pan, shape the meat mixture into a loaf in the center of the pan.

  9. Cut the potatoes into medium sized chunks (for a regular sized russet I typically cut them in quarters or sixths) and wedge them all around the outside of the meatloaf. The grease from the meat will make them delicious, which is why I use 80/20 blend hamburger for this recipe.

  11. Salt and pepper generously.
  12. Cook for 45 minutes.
  13. Remove the pan from the oven, and drizzle ketchup (don’t go easy on the ketchup, really slather it on) all over the top of the meatloaf.
  14. Place back in the oven to cook for another 10 minutes.
  15. Allow the meatloaf to cool some before serving.
