Halloween food is so much fun to make! It doesn’t all have to be dark and creepy, and these brightly colored cookies are just perfect!
I like to have my Halloween decor be bright and cheery, and adding bright colors to Halloween themes is so much fun!
Holiday cookies are some of my favorite things, but if you make these cute Eyeball Cookies, you also need to make these Monster Rice Krispy Treats! They use the same eye sprinkles, have the same fun colors, and are super easy (especially if you use store-bought rice krispy treats!)
How do you make these Eyeball Cookies?
Step 1: Gather your supplies.
You will need:
- White Cake Mix
- Eggs
- Oil
- Food Coloring
- Powdered Sugar
- Eye Sprinkles
Step 2: Make the cookie dough.
Use a mixing spoon and combine the cake mix, eggs, and oil to make the cookie dough. If you want to make them all the same color, you can add your food coloring here (use gel or powdered, don’t use liquid!), but if you want multiple different colors of Eyeball Cookies, then wait til the next step to add color.
Step 3: Add the food coloring.
Section your dough into as many sections as you want different colors. We went with four colors, so we split the dough into four sections.
Add your food coloring to your dough and knead to dye the dough evenly. Wear rubber gloves to keep your hands clean!
Step 4: Refrigerate the dough.
Once the dye is incorporated into the dough, wrap each bowl with saran wrap and refrigerate for thirty minutes.
Step 5: Make the cookie balls and bake.
Make tablespoon balls of dough by rolling them in your hands. Heavily coat the cookie dough balls in powdered sugar by rolling them in it.
Place the cookies on a parchment paper lines cookie sheet and bake at 375 degrees for ten minutes.
Step 6: Add the eyeball candies tp the Eyeball Cookies.
As they are cooling, gently press the eyeball sprinkles into the top of the cookies. Use the same size eye candies, or get multiple sizes to mix it up!
After they have cooled on a cooling rack for ten minutes, they’re ready to serve and eat!
These Eyeball cookies turn out so cute, and are a dessert kids love to help make! You only need a few ingredients and you have the cutest Halloween cookies right at your fingertips!
Variations for Eyeball Cookies:
- Colors. Change the colors of the cookies to match your party theme! Go traditional, or spice it up like I did and make them bright and cheery!
- Eyeball Candies. Use different size eyeball candies to make them different, or use a food coloring marker to make designs on the eyes themselves or change their color!
- Cake Mix. Change the flavor of the cake mix to change the flavor of the cookies! Keep in mind it will change the color of the cookies too.
How do you store these Eyeball Cookies?
Store your Halloween cookies in an air-tight container for up to a week. They are very soft when they first come out of the oven, so if you plan to store them for a few days before serving, let them cool for thirty minutes first.
