Pumpkin Sprinkle Cookies

However, I’m NOT the type of cook who enjoys tedious recipes with lots of steps. These Pumpkin Sprinkle Cookies are absolutely NOT fussy at all, and that’s why I love them.
You only need simple ingredients, a little bit of time, and only a few minutes in the oven for these to turn out perfectly!
Sprinkle cookies are kind of a staple in our house. We make ALL KINDS of sprinkle cookies for every holiday and occasion because cookies are good and sprinkles are MAGICAL!

How do you make these Pumpkin Sprinkle Cookies?
Step 1: Gather your supplies.
You will need:
- Butter
- Sugar
- Large Egg
- Vanilla
- Almond Extract
- Baking Powder
- Flour
- Fall Sprinkles (I used these)
- Pumpkin Cookie Cutters
- Mixing Bowls
- Baking Sheet
- Cooling Rack
- Rolling Pin
Step 2: Mix your wet ingredients.
In a mixing bowl, cream the butter and sugar together until well combined. Room temperature butter will work the best.
Then add in the egg and mix until smooth. I used a fork for this, but you could also use an electric mixer.
Then add in your vanilla and almond and mix well to combine.
IF you want to make your dough orange, now is the time to add several drops of gel food coloring and mix well.
Pro Tip: Do not use liquid food coloring to color this sugar cookie dough. It will change the consistency of the dough and your cookies may not turn out as planned.
Step 3: Mix your dry ingredients.
In a separate mixing bowl, combine the flour and the baking powder to make sure they’re mixed well.
Combine the wet and dry ingredients slowly, and then mix well, first using a fork, then eventually your hands.
Knead the dough into a ball. It will be slightly greasy, but still easily moldable like good play dough.
Step 3: Roll out the dough.
Roll out the dough onto a floured surface with a rolling pin to about 1/3″ thick. Use a pumpkin cookie cutter to cut out as many shapes as you can from your dough!
I used these cookie cutters and they were perfect!
Step 4: Place your cookies on a baking sheet.
Leave some space between each cookie on the cookie sheet. These won’t change shape much, if at all, so you don’t need to leave a lot of space between each cookie.
Step 5: Add the sprinkles.
Once all your cookie shapes are cut out, it’s time to add your sprinkles! I found these adorable sprinkles on Amazon and they were PERFECT.
Don’t just sprinkle them on top of your cookie dough, take the time to press them in a bit into the dough. It makes a big difference in how they look when they’re done baking!
Step 6: Bake your cookies.
Bake your cookies for 8-9 minutes at 350 degrees. They’re done. Trust me. Take them out.
Leave them on the baking sheet for a few minutes. They will keep cooking from the heat of the pan.
Remove them after a few minutes and place them on a cooling rack to finish cooling.
That’s all there is to make these Pumpkin Sprinkle cookies! They’re super easy, and my kids even love helping!

Tips for making AMAZING sprinkle cookies:
- Food Dye. Don’t use liquid dye. Use gel food coloring for the best results. Liquid can change the consistency of the dough.
- Sticky Dough. If your dough is too sticky, sprinkle a bit of flour over it and knead it some more.
- Sprinkles. A great sprinkle mix will make your cookies gorgeous!!
- Don’t Overbake. Eight or nine minutes is all you need to bake these cookies. Don’t overbake them!
Pumpkin Sprinkle Cookies

Ingredients
- 1 cup butter
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla
- ½ teaspoon almond extract
- 2 teaspoons baking powder
- 3 cups flour
Instructions
- Pre-heat your oven to 350.
- In a mixing bowl, cream the butter and sugar together.
- Add in the egg, vanilla, and almond and mix well.
- In a separate bowl, mix together the flour and baking powder.
- Add in half the flour mixture to the wet mixture and mix.
- Add in the second half of the flour mixture, and mix. The mixture will be dry, but keep mixing and kneading until it’s a soft, pliable consistency (like play dough).
- Sprinkle flour on a flat surface, and on top of your ball of dough, and roll it until it’s about ¼” – ⅓” thick.
- Cut out your pumpkins using a cookie cutter and place on a cookie sheet that’s been sprayed with non-stick spray.
- Add the sprinkles to the tops of the cookies, pressing on the top of the cookie gently to ensure the sprinkles bake into the tops.
- Bake at 350 for 8-9 minutes.
- Remove the cookies and let them cool on the pan for 5-10 minutes, before removing them and placing them on a cooling rack.
